Vegiterian Dishes

Aloo Mashroom roast

Ingredients Preparation Instructions
Mashroom 250gm 1.Clean Mashroom,chop in to small peaces.
2.Heat oil in a pan and add mashroom and little bit salt and fry for 5 min.Keep it aside.
2.Half boil potatoes and cut into samll peaces.
3.Heat oil in a pan.
4.Add onion,green chill and curry leaves,saute well.
5.If onions get cooked, add ginger garlic paste.fry for 1 min
6.Add tomatoes and fry for 2 min.
7.Add all the spices and saute well for 2 min.
8.Add potatoes sand stir well.
9.Add half fried mashroom and mix well.Add 2 TS water,close the lid and cook for 5 min.
10.Garnish with coriander leaves.
Potato 250gm
Onion 2
Ginger garlic paste 1 TS
Green chilli 2
Turmeric powder 1/4 S
Chilli powder 1/2 S
Coriander powder 1/2 S
Garam Masala 1/2 S
Coriander Leaves 2 TS
Curry Leaves 10
Salt To taste

Moru Curry

Ingredients Preparation Instructions
Curd 1 cup 1.Heat oil in a pan.
2.Splutter mustard seeds,cumin seeds,curry leaves,red chilli.
3.Add ginger paste,saute well.
4.Reduce flame,add turmeric powder saute for 2 second.
5.Add curd and mix well for 1 min.Off the flame
6.Heat oil in pan,add chopped onion,curry leaves and green chilli.
Cumin seeds 1/2 spoon
Mustard seeds 1/2 spoon
Ginger 1 peace
Salt To taste
Turmeric powder 1/4 spoon
Oil to Season

Soyachunks Masala

Ingredients Preparation Instructions
Soya chunks 3 cup 1.Dip soya chunks in water for 1 hour.
2.Preasure cook the chunks with little salt.
3.Drain the water and wash it in tap.
4.Squeeze the chunks the remove the water.
5.Just crush the chunks using mixer grinder.
6.Heat oil in pan,add chopped onion,curry leaves and green chilli.
7.If onions get fried, add tomatoes and saute well.
8.Add ginger garlic paste,saute well till that raw smell goes.
9.Add turmeric powder,chilli powder,coriander powder and garam masala.stir well.
10.Add the crushed chunks and mix well for 2 min.
11.Close the lid of pan and cook for 10 min.Add little amount of water if required.
12.Garnish with coriander leaves

Cauliflower Poriyal

Ingredients Preparation Instructions
Cauliflower 3 cup 1.Mix salt and turmeric powder in 1 bowl and dip the cauliflower flowerets in it for 15 min.
2.Heat oil in a pan,add mustard seeds and curry leaves.
3.Add finely chopped greenchilli and onion.
4Add grated coconut and stir well.
5.Add the chopped cauliflower and mix well for 2 min.
6.Add little amount of water and salt,close the lid of pan and cook for 10 min.
Grated coconut 1 cup
Green chilli 2

mustard seed 1 S
Curry leaves 10
Salt to taste
Oil to Season

Wheat Dosa

Ingredients Preparation Instructions
Wheat flour 2 cup 1.Mix wheat flour with water and salt to form a thick batter
2.Add finely chopped greenchilli and onion.
3.Make dosa in nonstick pan.
4.If you are not using nonstick pan,then we need to spread little bit oil on the pan while making dosa.

Pachadi

Ingredients Preparation Instructions
Cucumber 1/2 kg 1.Cut the cucmber in to medium peaces and cook with little amount of water in low flame.Add salt
2.If cucumber half cooked open the lid of the pan and drain off the water
3.Grind coconut with greenchilli,ginger,curd and mustard seeds.
4.Add this paste to cucumber and mix well and cook for 1 min.
5.Season with mustard seeds and curry leaves.

Moru Kalan

Ingredients Preparation Instructions
Banana/Yam 1/2 kg 1.Cut banana/yam in to big peaces.Half boil this with very little amount of water.Add turmeric powder,chilli powder and salt.
2.Grind coconut well with garlic,pepper,green chilli.Add little water while grinding
3.Add curd to the banana,notice there should not have water in the pot.
4.Add coconut mix to the peaces and mix well.
5.Splutter mustard seeds in another pan,add curry leaves,red chilli.
6.Add this mix to curry

Garlic 2
Green chilli 2
Turmeric Powder 1 TS
Chilli Powder 1 Pinch
Red chilli 3
Fenugreek seeds 1/2 S
